SMOKED SALMON PIZZA WITH RED ONIONS AND FETTA by COOKING WITH THE WORLD'S BEST/MELBOURNE

SMOKED SALMON PIZZA

INGREDIENTS

1X23 cm   pita bread
1/2 cup tomato puree
1 small red onion---sliced
1/2 cup grated mozzarella cheese
150 g of Huon hot smoked salmon
1/2 cup marinated fetta
1/2 cup parsley
extra virgin oil---2tbsp


Preheat oven to 220 degrees C.  Place the pita bread onto an oven tray
and smear it with the tomato puree.
Scatter evenly with half the mozzarella and all the onions.
Break the hot smoked salmon into pieces and spread over the onions.
Finish with fetta and remainder of the mozzarella.
Bake until golden and crisp, then scatter with the parsley and olive oil.
