PAPAYA SALAD
1 green, peeled
2 red bird eye's chillies
1tbsp grated palm sugar
2 garlic cloves
50 ml fish sauce
juice of 1 lime
Method:
1. Peel the papaya. Cut the papaya into long thin strips
and place in a bowl, discard the seeds.
2. Place the chilli, sugar, garlic and fish sauce in a mortar and pestle and grind to a coarse paste. Add the lime juice and adjust with a little more fish sauce. Just before serving, add the dressing to the papaya and toss to combine.
Note: Papaya is rich in vitamins and act as antioxidant. It
is also an effective natural inflammatory.
