SWORDFISH WITH OLIVE OIL AND LEMON DRESSING (R. MITCHELL)


SWORDFISH RECIPE

250 ml extra virgin olive oil
1 garlic clove
2 table spoons chopped Italian parsley
2 tablespoons chopped mint
juice of 2 lemons
6 swordfish fillets

PROCEDURE:


1.  Mix together the oil, parsley, mint and lemon juice
and season well  Put the fish in a marinade and leave
for about one hour.

2.  The fish can be cooked on a barbecue, in a non-stick
frying pan, or on a chargrill pan---as long as it is very hot.

3.  Cook the fish for about 2-3 minutes on each side.

4.  Serve at once with the prepared seasoning in #1.
