BARBECUED SALMON WITH ORANGE AND
CHICKPEAS
2 oranges
fennel, sliced
chickpeas
1/2 red onion, thinly sliced
1/2 cup parsley leaves
2 tablespoons fresh dill
1 large skinless fillet about 375 grams
olive oil spray
50 g rocket leaves
lemon wedges, to serve
pepper to taste
1. Squezze an orange into a bowl. Add fennel, chickpeas, onion, parsley and dill; season with pepper. Toss to combine.
2. Cut salmon lengthwise into 8 slices. Spray lightly with olive spray. Cook on barbecue for about 1 minute on each side.
Add salmon and rocket to the mixture and toss to combine.
3. Serve with lemon wedges.
