CEREAL PRAWNS AND LINGUINE PASTA IN HOT CHILI PESTO: RECIPE BY CHARMINE ILAGO

Cereal Prawns and Linguine Pasta in Hot Chili Pesto

Ingredients:
500 g large headless prawns, peeled and deveined
flour
beaten eggs
1 cup frosted flakes cereal, crushed
3 tbsp olive oil
3 pcs onions, chopped
1 cup black olives, chopped
1 cup red and yellow capsicums, sliced
2 tbsp chili flakes
1 tsp cayenne pepper
1 tsp mild paprika
salt and pepper to taste
grated Parmesan cheese
fresh Basil and lemon wedges for garnish
whole wheat pasta or red linguine pasta

For Chili Pesto:
1 cup olive oil
3/4 cup basil leaves
20 g crushed pine nuts, cashew nuts or peanuts
2 tbsp garlic, minced
1 tbsp Sambal olek or chili pasted
grated Parmesan cheese to taste

Procedure:
1. Cook pasta according to package directions.
2. Bread prawns with flour, egg and crushed frosted cereals. Fry in oil until cooked.
3. Make chili pesto: In a bowl, blend together olive oil, basil, chili, crushed pine nuts, garlic and grated Parmesan cheese.
4. Sauté onions in olive oil. Cook until translucent. Add chili, pesto, and olives, red and yellow peppers. Season with salt, pepper, chili flakes, Sambal, cayenne pepper and paprika.
5. Add cooked pasta and turn off heat. Garnish with lemon wedges and fresh basil. Top with grated parmesan cheese.
