CRABS IN COCONUT CREAM

Ginataang Alimango (Crabs in Coconut Cream) Recipe by C. Clemente
Philippine Recipe
Ingredients:
4-5 pieces crabs or alimango, cut into quarters
2 tbsp cooking oil
1 tsp garlic, minced
2 tbsp onions, chopped
1 tsp ginger grated
5 cups coconut milk
2 cups sitaw (long beans), cut into 2 inch length
3-4 pcs finger chili peppers (remove seeds and slice diagonally)
salt and pepper to taste
patis (fish sauce) to taste
Procedure:
1. In a large pot, heat cooking oil. Saute garlic, onions and ginger.
2. Pour in coconut milk and bring to a boil.
Simmer over medium heat until the coconut milk thickens and the oil comes out.
3. Drop in the crabs and top with the sitaw (long beans) and finger chili peppers.
Season with salt and pepper to taste. Add patis (fish sauce), if desired.
4. Cook and simmer for 15-20 minutes until crabs are cooked and bright orange in color.
